Kyo yasai are traditional vegetables unique to Kyoto. They have unique shapes, vivid colors and are rich in nutrition. For these reasons, Kyoto vegetables are highly valued and attract people throughout Japan, especially chefs. Today, about 40 kinds of vegetables in Kyoto are designated as traditional vegetables. Not only in Japanese cuisine, but many chefs like to use Kyo yasai in French, Italian and other culinary creations to create fusion recipes bringing together Kyoto and the world
