Kamaboko – Fish Cake

Kamaboko, commonly known as fish cake, is a steamed loaf of pureed white fish. Some types of kamaboko contain vegetables or condiments for flavor or variety (onion, ginger, etc.). Kamaboko can be found in many traditional Japanese dishes, especially in New Years meals. They come in various shapes and sizes. Some are oblong and skewered on sticks. In Nishiki, you can find more contemporary versions (deep fried or using unique ingredients like bacon and cheese). Try one fresh — you might be pleasantly surprised.
